i have been thinking of eating lighter meals in these days because we are going to eat a lot on thanks giving weekend and soon will be christmas which means many pre christmas parties with tons of food. so i'm going to share some of my light meals these days with you. also as you might have noticed from my older posts i love endives and i love serving salads and light meals in them.
i made some salmon endive bites to have a light but filling meal. ingredients:
- one slice of salmon
- three endives
- half a grapefruit
- one cup edamame beans
- fresh cilantro
- fresh dill
- olive oil
- one lime
chop the salmon in tiny pieces and marinate it in salt, pepper, dill, cilantro, olive oil and lime juice for a couple of hours. saute edamame beans with some salt, pepper, and olive oil for five minutes. add them to the mix. peel the grapefruit short before serving that it doesn't get bitter and add it to the mix. if you don't like the acidity of grapefruit and lime together, i would suggest using only one of them, but i am persian and i really prefer the fresher taste than creamier ones.:-) serve the mix in beautiful endives and have a bite. nousheh jahn!
