this is the first time i made mousselines or anything close to that but i am very happy with how it turned out and i would definitely make it as an appetizer for small parties.
ingredients:
- one skinless chicken breast
- two shallots
- one cup of ricotta cheese
- two eggs
- two limes
- crushed seeds of four cardamom pods
- one cup of dry white wine
- one cup heavy cream
- fresh or dried oregano
- cilantro to garnish
the recipe didn't call to cook the chicken first but i rather took a faster approach. the original recipe needed about four hours but i cut it into an hour by cooking the chicken and shallots for half an hour in a dutch oven. then i chopped the chicken into smaller pieces and put it in a food processor. then add the cheese, eggs, cardamom seeds, oregano, white wine, and salt and pepper. process until ingredients thoroughly blended. gradually add the cream until the mixture has a smooth and creamy texture. since i haven't had any small cup ramekins i used a one big ceramic dish. lightly grease the base of it and pour the ingredients in. another change i made to the recipe is, since i don't have a slow cooker, i used a bigger oven dish and filled it with boiling water and put the ceramic dish inside the water and covered with aluminum foil. let cook on medium for half hour. unmould the mousselines on to warmed plate. serve it with tomato salad and garnish with fresh cilantro. nousheh jahn!
