since it's valentine's day this monday and heart month the whole february; all recipes i see look very red. i like red but i thought as i like the diversity and each color is beautiful in a different way, i make a yellow dessert.
ingredients:
- saffron: as much as you can
- 1/2 cup rosewater
- two cups rice flour
- one cup sugar
- 1/4 cup fresh pistachios
- 1/4 cup butter
first ground the saffron and mix it with a small cup of boiling water until it dissolves. mix the dissolved saffron, sugar and a cup of hot water in a bowl.
in a non stick pan heat the butter and add the rice flour slowly. you have to stir constantly, so don't leave the stove please, it can make your yellow dessert brown. stir about ten minutes till you can smell butter.
add the sugar mix slowly and stir constantly. it becomes like a sticky mix. keep on stirring. if you like it as a saffron brownie, you can add the pistachios and rosewater now and it's ready to serve. if you like it as a pudding as another half cup of water slowly and stir till it smooths. pour it in bowls and let it cool for a couple of hours in the fridge. in case you don't have fresh pistachios, leave some dried peeled pistachios in a bowl of water for a day and through the water away. the pistachios taste like fresh. nousheh jahn!
just beautiful. Love the addition of the saffron with rose!
