this is the first time i made green curry from scratch. it was not as complicated as i expected it to be and it tasted 100000 times better than those ready to use curries.
ingredients:
- one onion
- one fresh green chilli
- four garlic cloves
- 1/2 cup cashew nuts
- one tsp fennel seeds
- one cup unsweetened shredded coconut
- one tsp cumin seeds
- one tsp ground coriander
- one tsp ground cumin
- one cup heavy cream
- one piece of white fish fillet, i used seabass
- one tsp ground turmeric
- one lime
- one eggplant
- four carrots
- one pepperoni
- two cups chopped cilantro
- two cups basmati rice
- one cup alfaalfa beans
- enough butter, and fresh ground salt and pepper
peel and cut the onion and garlic cloves into small pieces. place them with cashew nuts, fennel seeds, coconut, cream and three cups of water in a food processor and blend to a smooth paste.
in the meanwhile cook the alfaalfa beans in two cups of water, salt, pepper, and butter for half an hour. in another pot cook the rice with two cups of water and enough salt and after the water is gone, add the beans into it. add some butter and turn it down to low and let them cook together for twenty minutes.
cut and saute the eggplant in a pan with olive oil. add cumin seeds for a minute until they give off their aroma. add carrots and saute them another five minutes. pour the coconut mix in and let them cook together for half hour.
in the meanwhile cut and marinate the fish in salt, pepper, turmeric, and lime juice. add the bell pepper, pepperoni, and fish into the pot after half hour. let them cook together for twenty minutes.
serve it with the rice. nousheh jahn!

This looks really delicious. It's been ages since I made a green curry. This reminds me how gorgeous they are and makes me want to rescue the lime leaves out of the freezer, thanks!!
