it was a cold and rainy weekend in san francisco. actually it has been raining for two weeks here, which is very rare. i decided to enjoy the amazing sea food fresh from water and put them together and make a warm fish soup to enjoy a cosy meal.
- one kg mixed fish and shellfish
- one kg fresh heirloom tomatoes
- one garlic
- three shallots
- one celery stick
- bell pepper
- one tsp saffron
- one tsp oregano
- salt and ground black pepper
- fresh parsley and lime for garnish
- a glass of dry white wine
cut the fish fillets into small pieces and cook them in a large pan with a cup of water. bring it to the boil, and simmer for ten minutes. strain and reserve the liquid. wash the clams properly with cold water. then boil them with a glass of white wine for five minutes. transfer the open clams out of the wine and don't use the ones that have not opened. strain the wine with a cloth strainer and reserve the liquid. heat the butter in a dutch oven and add chopped shallots and garlic. cook celery until softened. add fennel seeds and oregano. i find these two the best to neutralize any sea food smell. add the tomatoes, bell peppers, and the liquid you saved from sea food. add saffron to the liquid. add the fish and shellfish, boil for five minutes. garnish with lime and fresh parsley and enjoy the soup with a slice of bread.
