i love ceviche, all sorts of ceviche and i get more excited to make ceviche when i see fresh sea food which happens very often in san francisco.:-) i try my own variations and add other ingredients to give it a different flavor every time.
this time i used some fresh sea bass as the main ingredient and gave it a persian flavor with some saffron and lime juice.
- two sea bass fillets
- half of a white onion
- chopped fresh cilantro
- chopped fresh dille
- one teaspoon of saffron
- two fresh limes
- one cup of chopped mango
- one cup of chopped pineapple
- fresh ground sea salt and pepper
cut the fish fillets in small slices. chop the onion in tiny pieces and add to the fish. chop the herbs and fruits and add them to the mix. press the limes into it and add olive oil, salt, and pepper. dissolve the saffron in a small cup of hot water and add to the mix. leave them in the fridge and let it cool for four to six hours. serve it martini glasses or if you don't have any like me use some wide red wine glasses. enjoy it with crackers or your favorite chips. i used some magnificent carrot and purple potato chips from wholefoods. nousheh jahn!
